Ravine Sauvignon Blanc 2019
The intention of making this wine was to create a complex layered Sauvignon Blanc that not only showcases the Four Mile Creek appellation (warm early growing season, sandy loams, cool autumn nights), but also represents a harmonious blend of old and new world winemaking techniques. It is a blend of many trials and experiments conducted in 2019 including whole cluster pressing, extended skin contact times , hand vs. machine harvest, organic yeast vs. commercial yeast, stainless steel ferments vs. French oak ferments, aging in oak vs. aging in stainless, cool fermentation vs. warm. This wine has it all.
Pineapple, passion fruit, boxwood, mango, and grapefruit make up the aromatics of this wine. On the palate this wine offers an oily texture in combination with a crisp mid palate. The lingering flavours on the finish are savoury, rich, and showcase notes of ripe pineapple, white peach, nutmeg and brown sugar. It feels like your sipping sunshine.
“My mouth waters for food every time I sip this wine. Seafood, garden salads, fresh pastas, roasted pork, caprese salad, chacuterie, firm cheeses, it can all work because this wine is crisp but balanced.” - Lydia Tomek, Winemaker.
