On the nose, this wine has a beautiful bouquet of shortbread,
butter cream, beeswax, nutmeg and vanilla. With flavours of
stone fruit, butterscotch, shortbread and crisp citrus, this
wine has a soft and silky mouthfeel from start to finish. A
great candidate for some really fun food and wine pairing
The vision for this wine was to create a blend that has all
the things that I love about Chardonnay at equal amounts
and represent the vintage and terroir as best as I could.
The Chardonnay is produced from 3 different clones,
picked over 5 different harvest dates. These dates were
determined based on flavour, acidity and integrity of the
fruit. Each vineyard that this fruit was sourced from has truly
contributed to the blend: richness from St Davids Bench,
acidity and minerality from Niagara Lakeshore and a floral
note from the Four Mile Creek appellation.
