Tasting Notes
There is an intended initial tartness in this wine that helps
carry an underlying creaminess which seems to peak mid
palette. A lovely mousse and traditional amount of acidity
leave your palate feeling clean and refreshed. Enjoy flavours
if brioche, citrus, apple, honey and a subtle minerality.

Winemaker Notes
This wine was aged in bottle on its lees for 5 years and
was made from early picks of Chardonnay and Pinot Noir.
Picking early captures freshness and bright acidity. The
traditional champagne method of low pressure pressing
and hand picking whole cluster fruit allows us to focus on
soft fruit extraction and nearly zero phenolic extraction.
This wine is produced the traditional champagne style from
varietal content to bottling methods.
Food Pairing Notes
This wine makes a great pairing with seafood. We love it
paired with freshly shucked oysters or cold, poached shrimp
with a squeeze of lemon. It would also be great with freshly
baked gougeres.
