Tasting Notes
This Cabernet Sauvignon is layered with robust and rich flavours and with
bold firm tannins that hold fruit but grips your whole palate indicating
great ageabilty.
On the nose, we are met with aromas of blackberry, plum, cola, roasted red
pepper and bay leaf.
The palate will find flavours of blackberry jam, dark cherry, black currants,
cigar, walnut, and espresso.
This wine is deep, bold, and tannic. Extremely bold. Persistent ripe tannins
grip your palate, with a chalky, lingering dry finish. Decanting is highly
recommended, prior to enjoying with food or company.

Winemaker Notes
Our Reserve Cabernet Sauvignon is made using only organic grown,
cropped low, fruit from our estate in the St. David’s Bench Appellation.
On the farm the Cab Sauv is located on the warmest site of the farm with
the soil in this block being a sandy loam over lacustrine silty clay
(Beverly soil). 2020’s warm autumn days and cool dry nights were perfect
for keeping disease pressure low and preserving freshness. This wine
was selected from our top 8 red French barrels of the 2020 vintage and
barrel aged for 22 months.
Food Pairing Notes
Enjoy this mouth-watering wine with grilled steaks, short ribs, grilled
portobello mushrooms, Kobe burgers, stews, pork ragu. Richer foods with
salt and little spice. Pairs heavenly with Celtic blue cheese.
