Tasting Notes
This wine starts off oily and round and then progresses into a lean,
long finish. With a soft acid backbone, this wine has flavours of
mandarin orange, grapefruit, pineapple, honey and passion fruit.
Winemaker Notes
When making this Sauvignon Blanc, the intention was to celebrate
fruit, capturing the right amount of acid, flavour and to ensure
great versatility with food. The fruit was immediately destemmed,
crushed and pressed and then fermented in both stainless steel
and barrel. No malolactic fermentation was used in the making of
this wine. Even though 2021 may be considered a challenging year,
the personality of this wine is soft but intriguing with a beautiful
balance between acidity and fruit concentation. The fruit for this
Sauvignon Blanc was picked from our Four Mile Creek site and 50%
was fermented in french oak barrels for 5 months while the other
50% was done in stainless steel.

pastas or seafood pastas, grilled asparagus, roasted
chicken, pan fried Lake Erie Perch or a dish with a little
Mediterranean inspiration like Insalate di Mare.
