Reserve Cabernet Sauvignon 2016
The 2016 growing season was warm and dry. This is a good thing for wineries making premium quality wines. The heat allows us to really ripen the grapes and develop intense flavours. We find the red wines of 2016 show great colour and a real depth of flavour.
This wine is dark and deep in colour. It is showing aromas of black currant jelly, dark chocolate and pencil lead. In the mouth this is a bigger red wine. It has mouth filling tannin. With a couple years of cellaring it will soften and the palate will round out. It has a blackberry-like finish.
Food Pairing: A great match for this wine would be some grilled game meat like venison or bison. A nice alternative would be a meaty grilled Portobello mushroom cap that was marinated in soya sauce and just a touch of truffle oil.
