Notes from the Winemaker

This is Ravine’s first foray into the world of Icewine. While our estate grown Riesling was originally slated for icewine production, the botrytis affected fruit exhibited such unique flavor characteristics we elected to use is as a single varietal Riesling and never looked back.

For our icewine, we carefully sourced from one of the regions premiere Riesling Icewine producers. Ravine winemaker Shauna White weaved some of her cellar magic and fashioned an icewine that truly exemplifies the Ravine winemaking style and philosophy. Ravine wines are about balance and elegance and this icewine suits the bill perfectly. Icewine typically exhibits intense notes of green apple, apricot and honey and in this regard this icewine is indeed classic. However what makes this wine more characteristicly Ravine is in it’s weight. Icewine’s because of their sweetness, have higher viscosity and tend have to be like syrup in texture. Ravine’s icewine is a touch on the lighter side with more elegant than intense flavor profile. With less than 200 cases produced this truly a limited edition craft wine from one of Niagara’s small, family owned, artisanal producers.

About Ravine Vineyard

A 34 acre Estate farm whose origins date back to 1867 as a tender fruit farm. Established as an Estate Winery in late 2008, Ravine is a Wine Council of Ontario recognized sustainable winery, focusing on ultra premium wines. The Estate property is biodynamically farmed, producing certified organic grapes while sourced grapes are carefully selected from local growing partners. Winemakers Peter Gamble and Shauna White have developed an elegant portfolio of Bordeaux reds and Burgundian whites showcasing the uniqueness of Ravine’s terroir.
